Baked Spinach Artichoke Dip

Ingredients:

2 Cups of Raw Spinach (packed)

1 Cup of Cooked Cannellini Beans

¾ Cup of Boiled Artichoke Hearts

¾ Cup of Shredded Vegan Mozzarella Cheese

2 tbsp of Extra Virgin Olive Oil

1 tbsp of Diced Red Peppers

1 tbsp of Apple Cider Vinegar

Garlic Powder (to taste)

Onion Powder (to taste)

Preheat oven to 350. In a food processor, pulse the beans, spinach, artichoke hearts, olive oil, peppers, and vinegar. Transfer to a bowl and mix thoroughly with the vegan cheese, garlic powder, and onion powder. Bake for 20 minutes and serve with crackers, tortilla chips, or bread.

Crispy Oatmeal Cookies

Ingredients:

*Use Organic Ingredients

3 Cups of Raw Oats

1 ¼ Cup of Evaporated Cane Juice

1 Cup of Whole Wheat Flour

¾ Cup of Rice Milk

½ Cup of Chopped Raw Almonds

½ Cup of Melted Earth Balance

Cup of Sultanas (raisins)

¼ Cup of Raw Sunflower Seeds

1-2 tbsp of Vanilla

1 tbsp of Blackstrap Molasses

1 tsp of Cinnamon (or to taste)

½ tsp of Ginger

½ tsp of Baking Powder

Preheat oven to 350. Combine the oats, flour, chopped almonds, sultanas, sunflower seeds, baking powder, cinnamon, and ginger in a large bowl. In a smaller bowl, combine the melted Earth Balance, evaporated cane juice, rice milk, molasses, and vanilla. Add the ingredients of the smaller bowl into the larger bowl and mix well. Form into cookies and place on a baking sheet. Bake for 15 minutes at 350 or until slightly soft to the touch. Let cool and enjoy!

Pumpkin Raisin Muffins [Fat-Free]


Ingredients:

*Use Organic Ingredients

2 Cups of Cooked Mashed Pumpkin

2 Cups of Whole Wheat Flour

1 ¾ Cup of Evaporated Cane Juice

1 Cup of Sultanas (raisins)

½ Cup of Unsweetened Applesauce

¼ Cup of Soymilk

2 tbsp of Vanilla

1 tbsp of Cinnamon

1 tbsp of Baking Powder

Nutmeg (dash)

Preheat oven to 350. Combine the flour, sultanas, cinnamon, and nutmeg in a large bowl. In a smaller bowl, combine the pumpkin, applesauce, evaporated cane juice, soymilk, and vanilla. Add the ingredients of the smaller bowl into the larger bowl and mix well. Add in the baking powder last, mixing well but not over mixing. Spoon into your muffin pan, completely filling each individual muffin slot to make 12 muffins. Bake for 20 minutes at 350 and then an additional 20 minutes at 300. Let the muffins completely cool and enjoy!

Mini Curry Pies

Ingredients for the Dough:

2 ½ Cups of Whole Wheat Flour

¾ Cup of Filtered Water

Ingredients for the Pumpkin Filling:

*Use Organic Ingredients

Roasted Pumpkin Cubes

Soymilk

Diced Onions

Minced Garlic

Curry Powder (Coriander, Cumin, Ginger, Fenugreek, Chili, Turmeric, Fennel, Pepper, Cinnamon)

Bragg® Liquid Aminos

Mix the flour and water to form your dough. Knead well, adding more flour or water if needed. You do not want the dough sticking to your hands. In a bowl, mash the roasted pumpkin and add in the onions, garlic, soymilk, spices, and Braggs. Mix well. Feel free to sauté the onions and garlic before combining with the pumpkin.

Preheat oven to 350. Coat the individual cups of a muffin pan with your dough. Add the pumpkin filling and cover with another layer of dough to form your mini pies. Cut slits into the top of each mini pie. Bake for 25-30 minutes or until browned.

Chocolate Carrot Muffins [Fat-Free]


Ingredients:

2 Cups of Whole Wheat Flour

1 ¼ Cup of Shredded Carrots

1 ¼ Cup of Evaporated Cane Juice

¾ Cup of Unsweetened Applesauce

2 tbsp of Cocoa Powder

1 tbsp of Baking Powder

1 tbsp of Vanilla

1 tbsp of Cinnamon

Nutmeg (dash)

Preheat oven to 350. Combine the flour, cocoa powder, cinnamon, and nutmeg in a large bowl. In a smaller bowl, combine the shredded carrots, applesauce, evaporated cane juice, and vanilla. Add the ingredients of the smaller bowl into the larger bowl and mix well. Add in the baking powder, mix well but don’t over mix, and spoon into your muffin pan. Bake for 20-25 minutes or until your tester comes out clean. Enjoy!
