Black Bean and Avocado Brownies

Ingredients:

*Use Organic Ingredients

2 Cups of Whole Wheat Flour

2 Cups of Cooked Black Beans

2 Avocados

1 Cup of Evaporated Cane Juice

¼ Cup of Cocoa Powder

Dark Chocolate Bar

1 tbsp of Ground Coffee Beans

1 tbsp of Vanilla

1 tbsp of Baking Powder

Yes, you are reading the title right. There are black beans and avocados in these brownies. Now before you run away from your computer, let me assure you that you WILL NOT taste the black beans or avocadoes. Feel better? Now onto the recipe!

Preheat the oven to 350. Puree the black beans and avocados and set aside. In another bowl, combine the flour, evaporated cane juice, cocoa powder, ground coffee beans and baking powder. Add vanilla extract to the bowl with the black beans and avocados. Cut up a dark chocolate bar into small and large pieces and add to the flour mixture. Now combine all the ingredients in both bowls. Depending upon the size of your avocados, you may need to add in soymilk to help liquify. Mix well and bake for 35-40 minutes. Enjoy!

  1. Although I already have a tried-and-true brownie recipe, I’m willing to give yours a shot if only because it contains two of my fave foods: avocado and black beans!

  3. These turned out absolutely gorgeous, but the taste and texture leave everything to be desired. I had really high hopes for these and was planning to bring them to my volleyball team tomorrow because they are curious about my vegan eating habits. Thought some amazing brownies would be the ticket. That may be the case, but these are not the ones to use for that purpose! Not a ton of flavor, rather gummy.

      Thanks for your comment! I think there needs to be a better balance between the avocados and black beans. Or even just leaving out the black beans for that matter. I need to experiment with these again and will update the post as needed.
