Chocolate Carrot Muffins [Fat-Free]


Ingredients:

*Use Organic Ingredients

2 Cups of Whole Wheat Flour

1 ¼ Cup of Shredded Carrots

1 ¼ Cup of Evaporated Cane Juice

¾ Cup of Unsweetened Applesauce

2 tbsp of Cocoa Powder

1 tbsp of Baking Powder

1 tbsp of Vanilla

1 tbsp of Cinnamon

Nutmeg (dash)

Preheat oven to 350. Combine the flour, cocoa powder, cinnamon, and nutmeg in a large bowl. In a smaller bowl, combine the shredded carrots, applesauce, evaporated cane juice, and vanilla. Add the ingredients of the smaller bowl into the larger bowl and mix well. Add in the baking powder, mix well but don’t over mix, and spoon into your muffin pan. Bake for 20-25 minutes or until your tester comes out clean. Enjoy!

*Note: This recipe did not contain any added oils!
